Beer Can Chicken

1 whole chicken

salt and pepper, (Cayenne) to taste

Lusty Monk BBQ Sauce (see below)

1 can beer

Italian salad dressing

Fresh cilantro, Parsley, Chives and Dill

Preparation

Prep: 30 mins     | Cook: 1 hour

1. Preheat barbecue for medium heat, I use a Weber Kettle grill and spread the briquettes around the outer edges of the grill after they are hot and keep wood chips around for smoke, mesquite, or apple are good.

2. Rinse chicken and pat dry. Season with salt and pepper to taste. (remove that bag of goodies)  Coat with Lusty Monk BBQ Sauce

3. Drink 3/4 of the beer out of the can and refill with Italian salad dressing, cilantro, parsley, dill and chives. Place can on a disposable baking tray. Set chicken on beer can (it acts as a stand), inserting can into cavity of the chicken.

4. Place baking tray with beer and chicken on the preheated barbecue. Cover and cook about 1 hour, until chicken is no longer pink and juices run clear.

Lusty Monk BBQ Sauce

4 Tbsp butter

1/2 onion, grated

1/2 cup Lusty Monk Alter Boy Mustard

1/2 cup brown sugar

1/2 cup cider vinegar

1 teaspoon cumin

1 bay leaf

Salt to taste

Directions:

Heat the butter over medium heat until it boils, then add the onion and saute for about 4 minutes.  Do not let the onions brown.

Add everything else, stir well and simmer slowly for at least 30 minutes.
