Pork BBQ

1  6 lb Pork butt

1 Weber Kettle grill

Lots of briquettes and beer

Rub

2 tablespoons paprika

2 tablespoons salt

1 tablespoon black pepper

2 teaspoons cayenne

1. Rub your meat and let it sit, a six pack should be long enough.

2. Preheat barbecue for medium heat, I use a Weber Kettle grill and spread the briquettes to one side of the grill after they are hot and make a tinfoil deflector for the other side. Keep wood chips around for smoke. mesquite, or apple are good.

This process takes around 8 hours, and the coals will definitely start to lose heat after about an hour and a half.  Replace the coals about every hour and a half.  I use a chimney coal starter so I have hot coals when I’m ready to freshen up the coals. A good idea, grill some veggies while cooking, it’s not good to cook on an empty stomach.

When done eat some, and use two forks to pull the meat apart, put it on a bun with Lusty Monk Slather Sauce and Coleslaw.

Lusty Monk Slather Sauce

4 Tbsp butter

1/2 onion, grated

I glove garlic chopped

1/2 cup Lusty Monk Burn in Hell Mustard

1/4 cup brown sugar

1/2 cup balsamic vinegar

1/4 bottle of beer

3 tbls Goya Recaito

1 teaspoon cumin

1/8 cup Dill pickle juice

Directions:

Heat the butter over medium heat until it boils, then add the onion and garlic saute for about 3 minutes.  Do not let the onions brown. Add everything else, stir well and simmer slowly for at least 30 minutes, let stand.
